In almost all of the farm Fontanasalsa is Cerasuola Paceco, mixed with small areas of Nocellara, Giarraffa and Biancolilla.

Cerasuola yields an average density, round and smooth taste with a peak of flavor of herbs, tomato and lemon. It has low acidity, is also rich in polyphenols, tocopherols and monounsaturated fatty acids and a high content of acid oleicoche.

These components give the oil a level of high quality, as evidenced by the awards and placings obtained in major national and international competitions.
